There’s nothing better than homemade food. But sometimes old recipes fade away as notes get misplaced and traditions are forgotten. To help highlight local recipes, the Danville Historical Society is going through more than 50 years of cookbooks.
Earlier this week, we took a trip to 1972 with the Big “D” Kitchen, put out by the Professional Women’s Club. Now we’re going to 1996, highlighting recipes from the Salvation Army Ladies Auxiliary.
1. Coca-Cola Salad- this was submitted by Ann A. Herndon
Ingredients: Two cans of crushed pineapple, 1 small box of cherry jello, 1 small box of lemon jello, 1 can or jar of mixed fruits, 1 cup of broken pecans and two cans of Coke. 1 or 2 bananas can be added if desired.
Instructions: Mix both jello boxes with the pineapple, heat until blended. Once cool, add in the Coke, nuts and fruits. Add bananas if desired. Refrigerate for at least four hours.

2. Tomato Gravy- this was submitted by Selma Craft.
Ingredients: Two “heaping” tablespoons of flour, 6 tablespoons of bacon grease, 3 cups of water, 6 to 8 large tomatoes, peeled and diced, 1 tablespoon of sugar and salt/pepper to taste.
Instructions: Brown flour in bacon grease. It does not need to be very dark. Add tomatoes, sugar, salt and pepper, with water. Simmer in an iron skillet about 45 minutes. Add more water if necessary. This is good for breakfast over grits.

3. Perfect Meat Loaf- this was submitted by Alice Boothe
Ingredients: 1 1/2 pound of ground beef, 1/4 teaspoon of pepper, 1/2 pound of ground pork, 1/4 teaspoon of dry mustard, 1/4 cup of finely chopped onion, 4 slices of soft bread small cubes, 2 tablespoons of finely chopped celery, 1 tablespoon of ketchup, 1/2 teaspoon of poultry seasoning, 1/2 cup of milk, 2 eggs and 1 tablespoon of Worcestershire sauce.
Instructions: Mix meats thoroughly, adding onion, celery and seasonings. Soak bread cubes in milk, adding eggs and sauce. Beat the bread mixture with a rotary beater. Combine the meats and egg mixture and form into a loaf. Place in baking pan and bake at 350 degrees for 1 hour. Makes 8 to 10 servings.

4. Hamburger-Bake Bean Casserole- this was submitted by Odessa J. Clifton
Ingredients: 2 strips of bacon, 1/2 cup of ketchup, 1 medium onion, 1/2 teaspoon of dry mustard, 1 teaspoon of salt, 1 tablespoon of Worchestershire sauce, 1 pound of hamburger, 1/2 cup of brown sugar and 2 cans (or enough for 1 pound) of pork and beans.
Instructions: Cut bacon into small pieces. Cook in frying pan with onions until onions have partially cooked. Add hamburger meat and cook until meat is white. Add other ingredients and mix well. Spoon mixture into a baking dish and bake at 375 degrees for 30 minutes. Yields 6 to 8 servings.

5. Russian Tea- this was submitted by Patsy Y. Hubbard
Ingredients: 1 cup of instant tea with lemon, 1/2 teaspoon of allspice, 1/2 teaspoon of nutmeg, 1 1/2 teaspoon of cinnamon, 16 ounces of Tang and 1 cup of sugar.
Instructions: Mix all ingredients together. Makes 1 quart. Use two teaspoons of mixture per cup of tea. Store in airtight jar.

6. Sunshine Punch-no name linked to submission
Ingredients: 6 ounces of frozen orange juice concentrate, 6 ounces of lemonade concentrate, 6 ounces of limeade concentrate, 4 cups of water and 1 liter of ginger ale.
Instructions: Combine first four ingredients and mix well. Add ginger ale just before serving.

7. Ham Apple Crisp- no name linked to submission
Ingredients: 2 cups of cooked ham that are cut in 1/2 inch cubes, 3/4 cup of sifted all-purpose flour, 6 cups apple slices (pared and cored), 1/2 teaspoon of salt, 2/3 cup of sugar, 3 tablespoons of sugar, 2 teaspoons of lemon juice, 1 stick of margarine and 1 cup of grated sharp cheese.
Instructions: Arrange ham in bottom of greased 10x6x2 inch baking dish. Cover with apples. Mix three tablespoons of sugar and lemon juice and spoon over apples. Mix flour, salt and 2/3 cup of sugar in mixing bowl. Cut in margarine with fork until mixture is crumbly. Add grated cheese and stir lightly. Sprinkle over apples. Bake at 350 degrees in oven for 40 to 45 minutes or until apples are tender and crust is crisp. Makes 6 servings.

8. Mrs. Steiner’s Hamburger Quiche- submitted by Mary Ellen Carter.
Ingredients: 1 unbaked 9-inch pastry shell, 1 tablespoon of cornstarch, 1/2 pound of ground beef, 1 1/2 cup of grated cheddar cheese, 1/2 cup of mayonnaise, 1/2 cup of diced onion, 1/2 cup of milk, dash of pepper and 2 eggs.
Instructions: Brown meat, drain off fat and set aside. Blend mayonnaise, milk, eggs and cornstarch until smooth. Stir in meat, cheese, onion and pepper. Put in pastry shell. Bake at 350 degrees in oven for 35 to 40 minutes or until a knife comes out clean when inserted in the middle. Let cool 5 to 10 minutes before serving. Serves 6 to 8.
